I believe the German disc should also be 1.85:1, not 1.78:1.

on the cover it says 1.85:1 (but on my tv it seems to be 1.78:1)

Really? Because the US 4K remastered disc and the identical Japanese one (which I'm adding now are clearly 1.85:1...

I don't see any black bars. But maybe I configured my tv wrong?

Pop in another 1.85:1 disc and see if there are black bars.
Also make sure there is no "overscan" applied on the TV.

Another way is a computer monitor, which never has overscan.

I figured out the problem: I had my Samsung TV configured for "16:9". After I changed it to "Screen Fit" it shows the 1:85:1 format like it really should be. At least for Blu-rays. For DVDs "Screen Fit" stayed disabled in the tv menu until I also changed the resolution from the Blu-ray player from "BD-Wise" to "Auto" (i.e. disabled BD-Wise completely)... Argh, Samsung...
