Since AC-3 is just another name for Dolby Digital, we've decided on our site to list Dolby Digital rather than AC-3.

I use headphones to decide if a 2.0 track is stereo or mono. It is very easy to heard — mono audio seems to be inside one’s head.

However, there are cases in which the dialogue and audio effects (foley) are in mono and only the music is present in stereo on surround.

One example that needs correction is the Danish release of Måske ku’ vi. The songs are there indeed present in 2.0 surround, everything else is mono. Only when I watched the whole movie I was able to realize that. When I created the entry, I merely listened to the beginning of the movie where everything is still mono. Only when the first song appears (much later), the audio expands remarkably, filling the living room.

"Dancer in the Dark" is one which is almost entirely in mono but once the musical segments kick in, the full 5.1 atmosphere comes to life. That is easy since it is labeled as a 5.1 track. Basically, music cues are the easiest scenes to tell whether a movie is in mono or stereo.
