The promos - do they only play with "Play All" or are they playable separately? What are the differences with each promo? They have different runtimes.

You can choose them seperately. They do not play if you chose "Play All". And the content of each promo is different. Its kinda some "recap" or a teaser for each new (coming) episode.

What is the difference between "Launch Promos" and "Promos"? Is it a "Play All" for promos?
Could you rewrite the information, move the promos to the extras below the episode listing to be clearer.

The feature "Launch Promos" is only available in this one disc (DISC ONE) under "Special Features". If you choose it, it plays further ST Discovery promos on this disc (not the ones I listed under every episode, 4 additional promos to be exact). This feature is not present in all other discs. The first episode "The Vulcan Hello" has no promo.
I left it like it is presented on the disc: For every episode you have the possibility to choose the promo, and if available, deleted/extended scenes. All other extras (featurettes) are in the "Special Features" menu. Since you already listed the deleted/extended scenes under "Deleted Scenes"/"Deleted/Extended Scenes" in the existing entries of ST Discovery, I left them in my entry as they were in yours.

For the episodes what happens with Klingon language? Are English subtitles burned in or are they optional?
For the deleted scenes, the only way to remove the English subtitles for Klingon is to change to a different language, like German for example?

The English subtitles are burnt in (they appear even if you chose another subtitle option). All other subtitles are optional.
