The commentary has optional English, French, German, Italian, Japanese and Spanish subtitles. (I guess this also applies to other releases which have the exact same language options)

Only the commentary? I'm pretty sure the other extras have subtitles too...

Yes, James, of course . The optional subs that are available for the commentary are also here for the extras. But also for all the other subs that are here. So Danish, Italian etc. that are NOT in the commentary. So short: Extras: All languages as subs. Commentary just the ones I listed.
