Perfume: The Story of a Murderer (Blu-ray) (2006) UPDATED
With regard to the South Korea - Nova Media edition, it might be worth clarifying (similar to the German edition, which i also have) that the subtitles in multiple languages ONLY apply to the film itself. All of the extras, which are mostly in German, have Korean subtitles only, so not English-friendly.
This film is really crying out for a proper English-language blu-ray release - none of them so far have the extras with English subs.

Which extras are in English and which are in German?
Are the Korean subtitles optional?

Okay, i've gone through both the German and South Korean editions. Here's some extra info:
Germany - Constantin Film
The existing information is generally correct BUT the "Making-of" documentary (53:52) does NOT have any English subtitles, and the portions of it in English (interviews with the actors) are DUBBED OVER with a German translation.
South Korea - Nova Media
Korean subtitles only are available for ALL of the extras. The "Making-of" documentary is identical to the German edition, with dubbed over German during the English portions.
However, the "Visualising the Aromas" featurette (13:35) is a mixture of German- and English-speaking, and in this one there's no German dubbing, so you can actually hear what they're saying.
Also, it's perhaps worth clarifying that while the trailer in this edition (2:25) is in English, it's tailored for the Korean market, with superimposed Korean text on various parts of the screen and burned-in Korean subtitles throughout.
Is that sufficient info? Let me know if something's unclear or you need anything more.

One small correction with the South Korea release:
"All other extras are in English with optional Korean subtitles."
Actually, all other extras are in GERMAN with optional Korean subtitles. So not very English friendly!

So, "Camera Work", "Mixing", "Location Scouting" featurettes are in German, and also all the interviews? Are only the German cast and crew interviewed on the Korean disc?

On the Korean disc, the "Interviews with the Cast & Crew" and "Location Scouting" featurettes have SOME (not much) English in them, but are otherwise in German. ALL of the other featurettes are ENTIRELY in German (all with Korean subs).
On the German disc, the only extras to feature unadulterated English (i.e. not dubbed over in German) are the interviews with Andrew Birkin, Ben Wishaw, Dustin Hoffman, Alan Rickman and Rachel Hurd-Wood. All of these (but none of the others) obviously have German subs (but no English!).
